Butter
2 Tablespoons
Olive Oil
1 Tablespoon
Onion, diced
1 Cup
Garlic, minced
4 Cloves
Flour
4 Tablespoons
Whole Milk
1 Quart
Carrots, shredded
1 Cup
Chicken breast,cooked diced
1 Cup
Chicken broth
2 Cups
Potato Gnocchi
1 Pound
Spinach
1 Cup
Thyme
1/2 Teaspoon
Parsley
1/2 Teaspoon
Black Pepper
1 Teaspoon
Red pepper
1/2 Teaspoon
Parmesan cheese
3 Tablespoons

Steps

  1. In a large saute pan heat the butter and olive oil over medium heat. Add in the onion and garlic and saute for 5 minutes.
  2. Add in flour and milk. Cook for 3-5 minutes or until thickened.
  3. Add carrots and chicken. Stir well until combined and add chicken broth. Cook for 5 minutes.
  4. Add gnocchi, spinach, thyme, pepper, and parsley. Simmer for 10 minutes.
  5. Stir in parmesan cheese and serve hot.
